This extra brut sparkling wine comes from a selection of grapes collected exclusively by hand, vinified with soft pressing and a partial cold maceration. The long sparkling wine enhances the freshness and finesse of the Perlage, making it perfect for every occasion.

Gastronomic Pairings

Bellussì Blanc de Blancs Extra Brut is extremely versatile and lends itself to numerous gastronomic combinations. Perfect as an aperitif, it marries magnificently with raw fish and crustaceans, such as red shrimp tartare and sea bass carpaccio. Excellent with refined appetizers based on crunchy vegetables and fresh cheeses. Among the first courses, it accompanies with elegance risotto with seafood and tagliolini with white truffle. With the latter, it enhances dishes based on delicate white meats, such as lemon chicken or porchetta rabbit. Thanks to its freshness, it is also ideal with a tempura of vegetables and sushi, for a modern and sophisticated taste experience.

Vinification Process

Vinification takes place in white with soft pressing and partial cold maceration, to enhance the aromatic characteristics of the grapes. Spumantization takes place according to the Charmat method, with prolonged reformation from 180 to 270 days, giving wine a refined structure and a fine pearl. Conservation takes place in a fresh environment, with a controlled temperature of less than 15 ° C, and wine is recommended for consumption within three years of production.
